- Make Dough: In a large bowl, mix 1.5 tsp instant yeast (or 2 tsp dry active yeast) and ½ tsp sugar with 1 cup lukewarm water. Let it sit for 10–15 minutes until frothy. Add 3 to 3.25 cups all-purpose or bread flour, 1 tsp salt, and 3 tbsp olive oil. Mix and knead into a smooth dough. Cover and let rise for 1 hour.
- Make Sauce: Puree 5–6 medium tomatoes. In a pan, sauté 2 tsp minced garlic in ¼ cup olive oil. Add tomato puree and salt to taste. Simmer uncovered for 20 minutes. Stir in ¼ cup chopped basil (or 3–4 tsp dried), 2 tsp dried oregano, and freshly ground black pepper.
- Assemble Pizza: Preheat oven to 230°C (450°F). Divide and roll dough on a floured surface. Place on a greased pan dusted with semolina or cornmeal. Brush the base with olive oil. Spread tomato sauce evenly. Sprinkle shredded mozzarella and parmesan cheese. Top with your choice of sliced onion, capsicum, corn, olives, mushrooms, and other veggies. Add Italian seasoning and red chili flakes.
- Bake: Place pan near the lower heating element. Bake for 10–15 minutes until the crust is golden and cheese melts. Serve hot.
