- Marinate Chicken:
Mix chicken with yogurt, spices, ginger garlic paste, kasuri methi, lemon juice, oil, and salt. Cover and refrigerate for at least 1 hour (overnight is best). - Prepare Gravy:
Sauté onions in oil until soft. Add ginger and garlic, cook 2–3 minutes. Add tomatoes, cashews, and salt. Cook until tomatoes are mushy. Add chilli powder, garam masala, coriander powder, cardamom, and sugar. Cool, then blend with water to a smooth puree. - Cook Gravy:
Melt butter in a pan. Add the blended puree, simmer until thick and creamy. Add ½ cup hot water if needed. - Grill Chicken:
In a separate pan, cook marinated chicken on high heat until browned and slightly charred. - Combine:
Add grilled chicken to the gravy. Simmer 3–4 minutes. Stir in cream, kasuri methi, and ghee. Adjust salt and spices. Rest 5 minutes. - Garnish:
Top with more cream and chopped coriander.
