Paneer Tikka Masala Recipe

  1. Marinate Paneer:
    Mix yogurt, ginger garlic paste, chili powder, garam masala, turmeric, kasuri methi, oil, salt, and lemon juice. Add paneer, (optionally onions/bell peppers) and coat well. Rest until gravy is ready.
  2. Prepare Masala:
    Sauté onions in 1 tbsp oil until transparent. Add tomatoes, cashews, sugar, salt—cook till mushy. Add chili powder, garam masala, and sauté for 2 min. Cool, blend with ¾ cup water to a smooth puree.
  3. Cook Gravy:
    Heat 1 tbsp oil, add whole spices (optional), then 1½ tsp ginger garlic paste—sauté. Add pureed onion-tomato mix (careful, may splash), add ¾ cup water, and cook 10 min covered until thick. Remove whole spices, add kasuri methi. Adjust salt.
  4. Grill Paneer:
    Option 1: Oven—skewer marinated paneer and veggies, grill at 220°C for 8–10 min, turning once.
    Option 2: Griddle—fry in oil, high heat, until golden.
    Option 3: Air fryer—skewer, air fry at 200°C for 5+2 min.
  5. Finish:
    Add grilled paneer (and veggies) to the thickened gravy. Mix gently, stir in cream, and garnish with coriander.
