- Preparation:
- Wash and cut chicken into strips (about 2½ inches length).
- Soak in buttermilk and salt for at least 20 minutes (for deep frying). If pan frying or baking, keep for 2-4 hours.
- Drain buttermilk, add ginger garlic paste, turmeric, corn flour, and red chili powder. Mix well and set aside 10 minutes.
- Frying:
- Deep fry chicken on medium heat until light golden. Remove to kitchen tissue.
(Or, grill at 180°C for about 8 minutes each side.)
- Deep fry chicken on medium heat until light golden. Remove to kitchen tissue.
- Final Cooking:
- Whisk yogurt well.
- Heat 1 tbsp oil in a pan. Add garlic, curry leaves, green chilies; fry until curry leaves are crispy and garlic is aromatic.
- Add mint leaves, red chili powder, and garam masala. Sauté for a minute.
- Remove pan from heat, pour in whisked yogurt, mix, and cook on low flame until mixture thickens. Add soy sauce, mix well.
- Add fried chicken, mix until the chicken is well coated. Turn off the heat.
