1. Prep the Spinach

  • Rinse spinach thoroughly. Discard mature stems.
  • Sauté spinach with green chilies and cashews in ½ tbsp oil for 2–3 mins until wilted.
  • Cool and blend with ¼ cup water to a smooth puree.

2. Make the Gravy

  • Heat 1 tbsp butter + ½ tbsp oil. Add whole spices if using.
  • Sauté onions until golden. Add ginger garlic paste and cook until aromatic.
  • Add tomatoes and salt. Cook until mushy.
  • Add garam masala and sauté for 2–3 mins.
  • Pour ¾ cup water and cook covered until onions are soft.
  • Crush kasuri methi and add.

3. Finish the Dish

  • Lower heat. Stir in spinach puree and cook just until it bubbles (2 mins).
  • Add paneer cubes and mix gently.
  • Optional: Add cream for richness.
  • Serve hot with naan, roti, or rice.
