1. Prep the Spinach
- Rinse spinach thoroughly. Discard mature stems.
- Sauté spinach with green chilies and cashews in ½ tbsp oil for 2–3 mins until wilted.
- Cool and blend with ¼ cup water to a smooth puree.
2. Make the Gravy
- Heat 1 tbsp butter + ½ tbsp oil. Add whole spices if using.
- Sauté onions until golden. Add ginger garlic paste and cook until aromatic.
- Add tomatoes and salt. Cook until mushy.
- Add garam masala and sauté for 2–3 mins.
- Pour ¾ cup water and cook covered until onions are soft.
- Crush kasuri methi and add.
3. Finish the Dish
- Lower heat. Stir in spinach puree and cook just until it bubbles (2 mins).
- Add paneer cubes and mix gently.
- Optional: Add cream for richness.
- Serve hot with naan, roti, or rice.
