Ingredients

  • 1 cup rice
  • 1/2 cup urad dal
  • 1 cup grated coconut
  • 1/3 cup jaggery
  • 1/2 tsp green cardamom powder
  • Turmeric leaves (or banana leaves for wrapping)
  • Water (for steaming)
  • Ghee (for greasing leaves)

Instructions

  1. Wash rice twice and soak for 4 hours. Wash urad dal and soak for 4 hours.
  2. Make a fine paste of urad dal and rice. Let it ferment for 5-6 hours (quicker in warm weather).
  3. Prepare stuffing: In a pan, add jaggery and coconut. Cook on medium until golden (5-7 mins). Add cardamom powder, mix well, and let cool.
  4. Wash and pat dry turmeric leaves. Grease with ghee. Spread a spoonful of batter on the leaf, add coconut stuffing, and fold lengthwise.
  5. Steam: Add water to steamer/kadai, bring to boil. Place folded leaves filled with batter. Steam for 10-12 mins.
  6. Let cool slightly, remove turmeric leaf gently, and serve rice cake at room temperature.
