Ingredients
- 1 tbsp coconut oil
- 2 medium peppers (red & yellow), cut into chunks
- 1 large onion, chopped
- 1 large sweet potato (~250 g), scrubbed & cubed
- 5 tbsp red curry paste (your choice)
- 400 ml coconut milk (1 can)
- 1 tbsp fresh coriander
- 1 tbsp flaked almonds, toasted
Instructions
- Prep veggies: Scrub sweet potato (keep the skin for nutrients), cube it. Chop peppers & onion.
- Cook base: Heat coconut oil in a large pan. Add peppers & onion, cook ~10 minutes until soft.
- Add curry flavors: Stir in sweet potato, curry paste, and coconut milk. Mix well.
- Simmer: Cover and cook ~20 minutes until potatoes are tender.
- Finish: Stir in coriander. Top with toasted almonds.
- Serve: Best with rice or naan bread.
