Sweet Potato Curry

Ingredients

  • 1 tbsp coconut oil
  • 2 medium peppers (red & yellow), cut into chunks
  • 1 large onion, chopped
  • 1 large sweet potato (~250 g), scrubbed & cubed
  • 5 tbsp red curry paste (your choice)
  • 400 ml coconut milk (1 can)
  • 1 tbsp fresh coriander
  • 1 tbsp flaked almonds, toasted

Instructions

  1. Prep veggies: Scrub sweet potato (keep the skin for nutrients), cube it. Chop peppers & onion.
  2. Cook base: Heat coconut oil in a large pan. Add peppers & onion, cook ~10 minutes until soft.
  3. Add curry flavors: Stir in sweet potato, curry paste, and coconut milk. Mix well.
  4. Simmer: Cover and cook ~20 minutes until potatoes are tender.
  5. Finish: Stir in coriander. Top with toasted almonds.
  6. Serve: Best with rice or naan bread.
