Ingredients

  • 3 cups diced ripe mango
  • ½ cup finely diced red onion
  • ⅓ cup golden raisins
  • ⅓ cup brown sugar (or honey for a lighter sweetness)
  • 5 tbsp finely minced garlic
  • 3 tbsp finely minced fresh ginger
  • 3 tbsp white wine vinegar (or apple cider vinegar for a fruitier tang)
  • ¼ tsp salt
  • ⅛ tsp red pepper flakes (or fresh chili for extra heat)

Instructions

  1. Combine all ingredients in a medium saucepan.
  2. Cook over medium‑low heat, covered, for about 30 minutes, stirring occasionally.
  3. Adjust texture: mash gently with a potato masher if you prefer smoother chutney or leave it chunky.
  4. Store: pour into clean jars, leaving ½‑inch headspace. Seal with lids (not too tight).
  5. Serve warm immediately, or let cool before refrigerating.
