- 3 cups diced ripe mango
- ½ cup finely diced red onion
- ⅓ cup golden raisins
- ⅓ cup brown sugar (or honey for a lighter sweetness)
- 5 tbsp finely minced garlic
- 3 tbsp finely minced fresh ginger
- 3 tbsp white wine vinegar (or apple cider vinegar for a fruitier tang)
- ¼ tsp salt
- ⅛ tsp red pepper flakes (or fresh chili for extra heat)
Instructions
- Combine all ingredients in a medium saucepan.
- Cook over medium‑low heat, covered, for about 30 minutes, stirring occasionally.
- Adjust texture: mash gently with a potato masher if you prefer smoother chutney or leave it chunky.
- Store: pour into clean jars, leaving ½‑inch headspace. Seal with lids (not too tight).
- Serve warm immediately, or let cool before refrigerating.
