Step 1: Prepare the Cauliflower

  1. Rinse the cauliflower florets in hot water with a little salt and drain well.
  2. In a bowl, mix all-purpose flour, corn flour, salt, black pepper, and ginger-garlic paste.
  3. Add water gradually to make a thick batter.
  4. Dip the cauliflower florets in the batter, ensuring they are well-coated.

Step 2: Fry the Cauliflower

  1. Heat oil in a deep pan over medium heat.
  2. Fry the coated cauliflower florets in batches until golden brown and crispy.
  3. Remove and drain on paper towels.

Step 3: Prepare Manchurian Sauce

  1. Heat 2 tablespoons of oil in a pan. Add chopped garlic, ginger, and onion. Sauté for a minute.
  2. Add capsicum and cook for another minute.
  3. Stir in soy sauce, chili sauce, tomato ketchup, vinegar, sugar, and black pepper powder.
  4. Add the corn flour slurry (corn flour mixed with water) and cook until the sauce thickens.

Step 4: Combine and Serve

  1. Add the fried cauliflower to the sauce and toss until evenly coated.
  2. Garnish with chopped spring onions and serve hot.
