  1. Marinate the Mutton: In a bowl, mix mutton with yogurt, ginger-garlic paste, turmeric, chili powder, and salt. Cover and let it marinate for at least 1 hour (overnight for best results).
  2. Fry the Onions: Heat ghee or oil in a pan. Fry the sliced onions on medium heat until they turn golden brown. Remove some for garnishing.
  3. Cook the Masala: Add cumin seeds, cloves, cardamoms, cinnamon, and bay leaf to the pan. Sauté for a few seconds. Then, add marinated mutton and cook on high heat for 5-7 minutes, stirring occasionally.
  4. Simmer the Korma: Lower the heat, add coriander powder, salt, and cashew/almond paste. Mix well and pour in ½ cup water. Cover and cook on low heat for 45-60 minutes until the mutton becomes tender. Stir occasionally and add water if needed.
  5. Finish & Serve: Sprinkle garam masala, mix well, and cook for another 5 minutes. Garnish with fried onions and fresh coriander.
