Step 1: Roast the Flours
- Heat ghee in a pan on low heat.
- Add gram flour and all-purpose flour, stirring continuously.
- Roast for 10-15 minutes until golden brown and fragrant. Set aside.
Step 2: Prepare Sugar Syrup
- In a separate pan, dissolve sugar in water and add milk to remove impurities.
- Bring it to a boil and cook until it reaches the hard ball stage (about 2-string consistency).
- Add cardamom powder and rose water for flavor.
Step 3: Mix and Set
- Quickly pour the hot sugar syrup into the roasted flour mixture while stirring continuously.
- Beat the mixture with a fork or spatula to develop the flaky texture.
- Pour onto a greased surface and flatten evenly.
- Sprinkle chopped nuts on top and press gently.
Step 4: Shape & Serve
- Once slightly cool, cut into square or diamond pieces.
- Allow to cool completely before serving.
