Step 1: Roast the Flours

  1. Heat ghee in a pan on low heat.
  2. Add gram flour and all-purpose flour, stirring continuously.
  3. Roast for 10-15 minutes until golden brown and fragrant. Set aside.

Step 2: Prepare Sugar Syrup

  1. In a separate pan, dissolve sugar in water and add milk to remove impurities.
  2. Bring it to a boil and cook until it reaches the hard ball stage (about 2-string consistency).
  3. Add cardamom powder and rose water for flavor.

Step 3: Mix and Set

  1. Quickly pour the hot sugar syrup into the roasted flour mixture while stirring continuously.
  2. Beat the mixture with a fork or spatula to develop the flaky texture.
  3. Pour onto a greased surface and flatten evenly.
  4. Sprinkle chopped nuts on top and press gently.

Step 4: Shape & Serve

  1. Once slightly cool, cut into square or diamond pieces.
  2. Allow to cool completely before serving.
