Step 1: Prepare the Kadai Masala
- Dry roast coriander seeds, cumin seeds, red chilies, black peppercorns, and fennel seeds until aromatic.
- Let them cool, then grind them into a coarse powder.
Step 2: Make the Curry
- Heat oil in a pan, add ginger-garlic paste, and sauté for a few seconds.
- Add chopped onions and cook until golden brown.
- Stir in tomato puree and cook until oil separates.
- Add turmeric powder, red chili powder, garam masala, and the ground kadai masala. Mix well.
- Add diced capsicum and sauté for a couple of minutes.
- Pour in water, add kasuri methi, and simmer for 2-3 minutes.
Step 3: Add the Eggs
- Add boiled eggs and mix gently to coat them in the masala.
- Simmer for a few minutes until the flavors blend well.
Step 4: Garnish & Serve
- Garnish with fresh coriander leaves and serve hot with roti, naan, or rice.
