Step 1: Prepare the Kadai Masala

  1. Dry roast coriander seeds, cumin seeds, red chilies, black peppercorns, and fennel seeds until aromatic.
  2. Let them cool, then grind them into a coarse powder.

Step 2: Make the Curry

  1. Heat oil in a pan, add ginger-garlic paste, and sauté for a few seconds.
  2. Add chopped onions and cook until golden brown.
  3. Stir in tomato puree and cook until oil separates.
  4. Add turmeric powder, red chili powder, garam masala, and the ground kadai masala. Mix well.
  5. Add diced capsicum and sauté for a couple of minutes.
  6. Pour in water, add kasuri methi, and simmer for 2-3 minutes.

Step 3: Add the Eggs

  1. Add boiled eggs and mix gently to coat them in the masala.
  2. Simmer for a few minutes until the flavors blend well.

Step 4: Garnish & Serve

  • Garnish with fresh coriander leaves and serve hot with roti, naan, or rice.
