- Prepare Radish: Grate the radish and squeeze out excess water using your hands or a muslin cloth. Keep the water aside for making parathas or dal later.
- Heat Oil: In a pan, heat oil or ghee. Add mustard seeds and cumin seeds. Let them splutter.
- Sauté Aromatics: Add chopped onions and green chilies. Sauté until onions turn golden.
- Add Spices: Stir in turmeric powder, red chili powder, coriander powder, and garam masala. Cook for a few seconds.
- Cook Radish: Add grated radish (and leaves, if using). Stir well and cook uncovered on medium heat for 5–7 minutes, stirring occasionally.
- Final Touch: Add amchur powder and salt. Mix well and cook for another 2 minutes until all moisture evaporates.
- Garnish & Serve: Sprinkle fresh coriander leaves and serve hot with rotis or parathas.
