Brine the Chicken

Mix yogurt, water, pepper/all-spice, and salt. Add chicken pieces and refrigerate for at least 4 hours or overnight to tenderize.

Coat the Patties

  • Prepare separate stations: seasoned flour, beaten egg, and breadcrumbs.
  • Drain chicken, dredge in flour → egg → breadcrumbs. Let rest for 5–10 minutes for coating to set.

Fry to Perfection

Heat oil over medium-high. Fry chicken patties in batches until golden and cooked (internal temp ~75 °C / 165 °F), about 4–6 min per side. Drain on rack or paper towel.
 

Make the Sauce

Whisk together mayo, olive oil, lemon juice, mustard, pepper, and salt. Adjust flavor.

Assemble the Burgers

  • Toast buns lightly.
  • Spread sauce on bottom halves, top with lettuce, tomato, and chicken patty.
  • Add more sauce, extra toppings if desired. Finish with top bun and serve hot.
