  1. Soak the chickpeas overnight in enough water.
  2. Cook chickpeas: Drain, rinse, and pressure cook with dried amla or tea bag, salt, and water until soft. Save the cooking water.
  3. Make spice powder: Dry-roast the whole spices until aromatic and slightly dark. Cool and grind them to a fine powder.
  4. Prepare the gravy: Heat oil, sauté onions until golden. Add ginger-garlic paste, then tomatoes. Cook till soft and oil separates.
  5. Lower the heat. Add the prepared spice powder, turmeric, red chili powder, optional garam masala, and green chilies.
  6. Add cooked chickpeas and about 1–1¼ cups of cooking water. Simmer for 10–15 minutes. Lightly mash a few chickpeas for a thicker texture.
  7. Add amchur or lemon juice if needed. Taste and adjust seasoning. Simmer until desired consistency is reached.
  8. Garnish with chopped coriander and serve hot.
