- Soak the chickpeas overnight in enough water.
- Cook chickpeas: Drain, rinse, and pressure cook with dried amla or tea bag, salt, and water until soft. Save the cooking water.
- Make spice powder: Dry-roast the whole spices until aromatic and slightly dark. Cool and grind them to a fine powder.
- Prepare the gravy: Heat oil, sauté onions until golden. Add ginger-garlic paste, then tomatoes. Cook till soft and oil separates.
- Lower the heat. Add the prepared spice powder, turmeric, red chili powder, optional garam masala, and green chilies.
- Add cooked chickpeas and about 1–1¼ cups of cooking water. Simmer for 10–15 minutes. Lightly mash a few chickpeas for a thicker texture.
- Add amchur or lemon juice if needed. Taste and adjust seasoning. Simmer until desired consistency is reached.
- Garnish with chopped coriander and serve hot.
