Veg Fried Rice Recipe (Chinese Style)

Prep the Rice
Use rice that is cooked, cooled, and separated. Leftover rice from the fridge works best.

Heat Oil
Heat oil in a wok or large pan over high heat. Add chopped garlic, ginger, and green chilies. Sauté for a few seconds.

Sauté Vegetables
Add onions (if using) and sauté until slightly translucent. Then add carrots, beans, and other veggies. Stir-fry on high heat for 4–6 minutes until slightly tender but still crunchy.

Season & Sauce
Add soy sauce, vinegar, salt, and pepper. Mix well and cook for 1 more minute.

Add Rice
Gently add the cooled rice and toss everything together until the rice is coated with sauces and heated through. Don’t over-mix to avoid breaking the grains.

Finish
Add chopped spring onion greens, toss again, and turn off the heat.
