Matar Paneer Recipe (Punjabi Mutter Paneer)

For Masala Paste:

  • ½ cup chopped onion
  • ¾–1 cup chopped tomatoes
  • 1 tsp ginger, 1 tsp garlic
  • 10–12 cashews (or almonds)
  • 2 Tbsp cilantro (coriander leaves)
  • 1 green chili
  • 4–5 black peppercorns
  • 1″ cinnamon
  • 1 tsp coriander seeds

Make the masala paste
Blend all the ingredients listed under "Masala Paste" with a little water into a smooth, creamy paste without chunks.

Cook the base
Heat oil or ghee in a pan. Add cumin seeds and let them splutter. Add the prepared masala paste and sauté until it turns aromatic and starts releasing oil.

Spice it up
Add turmeric, chili powder, and garam masala. Mix everything well.

Add peas & paneer
Add green peas and paneer cubes. Stir gently to coat them in the masala.

Simmer
Add a little water to adjust the gravy consistency. Cover and simmer on low heat for about 5 minutes, or until peas are tender.

Finish
Stir in cream (optional) and garnish with chopped cilantro.
