1. Prep:
- Grease a 7x2 inch square baking pan.
- Preheat oven to 180°C (355°F) or 170°C (340°F) for convection ovens.
2. Sift Dry Ingredients:
- Sift flour, baking powder, and salt into a bowl.
3. Make Cocoa Mixture:
- Heat milk until hot (not boiling).
- Add sugar, butter, and cocoa powder. Whisk until smooth and glossy.
- Turn off heat and stir in dark chocolate until melted.
4. Make Batter:
- Pour the hot cocoa mixture into the dry ingredients.
- Add vanilla extract.
- Mix gently until just combined. Batter should be medium-thick. Adjust with hot milk or flour if needed.
5. Bake:
- Pour batter into the pan. Tap to release air bubbles.
- Sprinkle chocolate chips on top.
- Bake for 28–35 minutes. A toothpick should come out with moist crumbs.
6. Cool & Serve:
- Let cool completely before slicing.
- Serve as-is or with powdered sugar, chocolate sauce, or a scoop of vanilla ice cream.
