Step 1: Prepare the Kadhi (Gravy)
- Whisk together yogurt, besan, turmeric, red chili powder, coriander powder, salt, and 3 cups water until smooth.
- Heat 2 tbsp ghee/oil in a pan. Add mustard seeds, cumin seeds, fenugreek seeds, curry leaves, ginger, and green chilies. Sauté for a few seconds.
- Pour in the prepared yogurt-besan mixture and mix well.
- Let it cook on a low flame, stirring occasionally, for 15-20 minutes until it thickens.
Step 2: Make Pakoras (Fritters)
- In a bowl, mix besan, onions, carom seeds, cumin, salt, chili powder, turmeric, and baking soda.
- Add water gradually to form a thick batter.
- Heat oil in a deep pan. Drop small portions of the batter into hot oil and fry until golden brown.
- Drain excess oil on a paper towel.
Step 3: Combine Pakoras with Kadhi
- Add the fried pakoras to the simmering kadhi.
- Cook for another 5-10 minutes on low heat so they soak up the flavors.
Step 4: Add Tadka (Tempering - Optional)
- Heat ghee in a small pan, add mustard seeds, cumin, dried red chilies, and red chili powder.
- Pour this tempering over the kadhi.
- Garnish with fresh coriander.
