Step 1: Prepare the Kadhi (Gravy)

  1. Whisk together yogurt, besan, turmeric, red chili powder, coriander powder, salt, and 3 cups water until smooth.
  2. Heat 2 tbsp ghee/oil in a pan. Add mustard seeds, cumin seeds, fenugreek seeds, curry leaves, ginger, and green chilies. Sauté for a few seconds.
  3. Pour in the prepared yogurt-besan mixture and mix well.
  4. Let it cook on a low flame, stirring occasionally, for 15-20 minutes until it thickens.

Step 2: Make Pakoras (Fritters)

  1. In a bowl, mix besan, onions, carom seeds, cumin, salt, chili powder, turmeric, and baking soda.
  2. Add water gradually to form a thick batter.
  3. Heat oil in a deep pan. Drop small portions of the batter into hot oil and fry until golden brown.
  4. Drain excess oil on a paper towel.

Step 3: Combine Pakoras with Kadhi

  1. Add the fried pakoras to the simmering kadhi.
  2. Cook for another 5-10 minutes on low heat so they soak up the flavors.

Step 4: Add Tadka (Tempering - Optional)

  1. Heat ghee in a small pan, add mustard seeds, cumin, dried red chilies, and red chili powder.
  2. Pour this tempering over the kadhi.
  3. Garnish with fresh coriander.
